What are some good strategies to raise the gravity of my homebrew?

I tend to brew lighter beers, like pillsners.

Hops don't affect gravity, but thanks for playing.

Try adding half a pound of malto dextrin to the boil. That'll raise the gravity a few points without affecting the flavor.

Which is your favorite type of honey for home-brewing beer (most recipes)?

I have been asked many times “What type of honey would you choose if a particular homebrew recipe didn't specify? Clover, orange blossom, or alfalfa honey? How does mesquite honey differ?

Store bought honey can be real slow to ferment so I prefer to use local honey that is non filtered. My faavorite is sourwood honey as it is very light in color and taste.
